Moondrop Cake

Ingredients

  • 1 box yellow cake mix
  • 1 (16-ounce) container sour cream
  • 1 cup sugar
  • 1 (20-ounce) can crushed pineapple, undrained
  • 2 (1-pound) containers whipped topping

Instructions


Bake cake according to package directions for a round cake. Mix together sour cream, sugar, and crushed pineapple with juice. Reserve 1 cup of this mixture for icing.
Slice round cakes in half to make four layers. Place one layer on a plate and cover with pineapple mixture. Continue layering cake and pineapple mixture, leaving top layer uncovered.
Combine whipped topping with reserved pineapple mixture. Frost cake on top and sides. Cover cake and refrigerate.
Note: This cake looks like a large snowball, and our family loves it at Thanksgiving and Christmas. My mother passed this recipe to me, and I’ve passed it to my daughter.
