Western Omelette

  • 2 tablespoons butter or margarine
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped celery
  • 1/4 cup chopped onion
  • 4 eggs
  • 2 tablespoons water
  • 1/4 cup finely chopped ham


In a frying pan, melt butter over medium heat. Sauté pepper, celery, and onion for
three minutes. Whisk together eggs and water; add ham.
Pour egg mixture into pan and cook for three to four minutes or until set. Fold over omelette and cut in half. Serve with toast and sliced tomatoes.
