Chinese Fried Rice

  • 2 tablespoons oil
  • 2 large onions, chopped
  • 2 cups rice, cooked
  • 1/2 teaspoon salt
  • 2 tablespoons soy sauce
  • 2 cups chicken, cooked and chopped
  • 2 tablespoons carrots, diced
  • 2 tablespoons green peas


Heat oil in skillet. Fry onions until brown. Add rice, salt, and soy sauce. Cook several minutes longer. Add chicken and heat through. Garnish with carrots and green peas. Serve hot. Yield: Six servings.
