Apple Duffy Cake

Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons baking soda
  • 1 teaspoon salt
  • 3 cups apples, peeled and chopped
  • 1 cup flaked coconut
  • 1 cup raisins
  • 1 cup black walnuts, chopped
  • Glaze:
  • 1 cup light brown sugar
  • 1/4 cup milk
  • 1 stick butter or margarine
  • Instructions


    Cream together eggs, sugar, vegetable oil, and vanilla. In another bowl, sift together flour, soda, and salt. Add to creamed mixture.
    Add apples, coconut, raisins, and walnuts; stir well. Pour into a greased tube pan. Bake for 11/2 to 2 hours at 350° or until tester comes out clean.
    Combine brown sugar, milk, and butter in a saucepan over moderate heat; bring to a boil. While the cake is still cooling in the pan on a rack, pour glaze over cake. Leave cake in pan until cool, then gently remove.
