Grated Sweet Potato Pudding

Ingredients

  • 2 eggs
  • 1 1/2 cups sugar
  • 1 1/2 cups milk
  • 1 teaspoon vanilla
  • 2 1/2 cups grated raw sweet potatoes
  • 1/2 stick butter or margarine, melted

Instructions


Beat eggs and add sugar, milk, vanilla, potatoes, and butter. Pour into a hot cast-iron skillet. Bake at 375° for one hour and 20 minutes or until light brown on top and brown around edge.
