No-Fat French Fries

  • 1 pound large red or white potatoes, unpeeled
  • Black pepper to taste
  • Cayenne pepper, paprika, or chili powder to taste
  • 1 egg white


Cut potatoes into fry-size strips. Place potatoes into a large bowl and sprinkle with black pepper and either cayenne pepper, paprika, or chili powder. Beat egg white and pour over fries; toss to cover evenly. (The egg white will crisp the fries.)
Place fries in a single layer on a baking sheet lightly coated with cooking spray. Bake
at 400° for 30 to 40 minutes, turning fries so they don’t stick. Brown on all sides. Serve hot.
Yield: Four servings. Each serving has 88 calories and 0 grams fat.
