Low-Fat Quesadillas

  • Flour tortillas (any size)
  • 1 (10 1/2-ounce) can fat-free refried beans
  • 1 cup fat-free shredded cheese
  • Salsa to taste


Spread beans directly from can onto one flour tortilla. Place tortilla, beans side up, in a skillet over medium-high heat. Sprinkle beans with shredded cheese; top with a second tortilla. Lightly brown the tortilla on both sides until cheese is melted. Remove from skillet, cut into triangles, and serve with salsa. Yield: 6-8 small quesadillas.
Note: Cooked chicken may also be added.
