Chewy Butterscotch Nut Bars

Submitted By: Sherrell Hickman

Ingredients

  • 1/2 cup butterscotch chips
  • 1/2 cup pecan pieces or coarsely chopped pecans, toasted
  • 1/2 cup light brown sugar, packed
  • 1 cup buttermilk biscuit mix
  • 1/2 cup dark brown sugar, packed
  • 1 cup buttermilk biscuit mix

Instructions

In a 1-quart, wide-mouth glass jar, gently layer and pack ingredients in order listed, beginning with butterscotch chips. Make sure brown sugar has a uniform texture and firmly pack it in the jar to prevent baking mix from sifting through it.
If there is any space left after adding the last ingredient, fill remainder of jar with more butterscotch chips or pecans. Place pretty fabric over lid; secure in place with ribbon or raffia. Decorate as desired.
Make a gift card to attach, listing the following baking instructions:
Empty contents of jar into a medium bowl. Stir in 1/2 cup (1 stick) butter or margarine, melted; 1 large egg; and 1 teaspoon vanilla. Press into an 8-x-8-x-2-inch baking pan coated with cooking spray. Bake at 350° for 18 to 22 minutes or until bars are light golden brown and center is almost set. Yield: 16 bars.
