Peanut Brittle Candy

Ingredients

  • 3 cups raw, shelled peanuts
  • 1 1/2 cups sugar
  • 1/2 cup white corn syrup
  • 1/2 cup cold water
  • 1/2 teaspoon baking soda

Instructions


Place a large iron skillet on stove. Mix together first four ingredients in skillet. Turn heat to medium-high and cook mixture, stirring constantly, for about 15 minutes. When about three peanuts “pop,” then it’s finished cooking. Remove from heat and quickly stir in baking soda. Spread on cookie sheet in as thin a layer as possible. Cool completely. Break into small pieces.
Note: A batch makes enough to fill three 10-ounce containers. I have 14 grandchildren, so Christmas can get expensive. They all love this gift.
