Cranberry Muffin Mix

  • 8 1/4 cups all-purpose flour
  • 3 cups sugar
  • 1/3 cup baking powder
  • 1 tablespoon salt
  • 1 cup shortening
  • 1 cup dried cranberries


In a bowl, combine dry ingredients; cut in shortening until mixture resembles coarse crumbs. Add cranberries. Prepare four quart jars and place 23/4 cups of the mix into each one.
Cover the lid with a circle of decorative fabric cut around edges with pinking shears; tie with ribbon. Attach a paper to the jar listing these ingredients and cooking instructions:
1 egg
1 cup evaporated milk
1 tablespoon butter or margarine, melted
Mix above ingredients with entire contents of jar. Fill 12 greased muffin tins 3/4 full.
Bake at 400° for 15 to 18 minutes. Cool for a few minutes before removing to a wire rack. Yield: 12 muffins.
If desired, sprinkle tops of muffins before baking with 1 teaspoon granulated sugar or swirl with a light powdered sugar glaze after baking.
