Pumpkin Chip Muffins

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 (16-ounce) can pumpkin
  • 1 1/2 cups oil
  • 3 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 2 cups (12 ounces) semisweet chocolate chips
  • Instructions


    Beat eggs, sugar, pumpkin, and oil until smooth. Combine flour, soda, baking powder, salt, and cinnamon. Add to pumpkin mixture; mix well. Fold in chocolate chips. Fill greased muffin cups about three-fourths full. Bake at 400° for 16 to 20 minutes or until done. Cool in pan for 10 minutes. Remove and serve.
    Yield: 24 muffins.
