Amazin' Raisin Cake

  • 3 cups all-purpose flour, unsifted
  • 2 cups sugar
  • 1 cup mayonnaise
  • 1/3 cup milk
  • 2 eggs
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 3 cups chopped, peeled apples
  • 1 cup raisins
  • 1 cup walnuts, coarsely chopped
  • 2 cups whipped cream
  • Instructions

    Grease and flour two 9-inch round baking pans. In a large bowl, using an electric mixer at low speed, beat together flour, sugar, mayonnaise, milk, eggs, baking soda, cinnamon, nutmeg, salt, and cloves for two minutes, scraping bowl frequently. Batter will be thick.
    With a spoon, stir in apples, raisins, and nuts. Spoon into pans. Bake at 350° for 45
    minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes. Remove and cool on wire racks. Fill and frost with whipped cream.
