Nancy's Red Beans & Rice

  • 1 pound red beans
  • 1 ham bone or hock (or 2 1/2 pieces of thick sliced bacon)
  • 2 medium onions, chopped
  • 1/2 cup green peppers, chopped
  • 2 or 3 bay leaves
  • 2 cloves garlic, minced
  • 1 teapsoon cumin
  • Red pepper to taste
  • Dash of salt
  • Dash of hot sauce
  • 1 pound smoked sausage, sliced
  • 1 cup white rice, uncooked
  • Instructions

    Soak beans overnight. Cover with water and add ham, onions, green pepper, garlic, bay leaves, cumin, red pepper, and hot sauce. Cook slowly for three to four hours. Add salt when beans are tender. Add sausage 20 minutes before beans are finished.
    Prepare rice according to package directions. Serve beans with rice and hot French bread.
