Vidalia Onion Relish

Ingredients

  • 2 pounds large Vidalia onions (about 4), coarsely chopped
  • 2 ribs celery, sliced
  • 1 red bell pepper, seeded and chopped
  • 1 tablespoon butter or margarine
  • 1/2 cup cider vinegar
  • 2 tablespoons brown sugar, firmly packed
  • 1 teaspoon mustard seed
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon salt
  • 1/2 cup water
  • Instructions


    In a medium saucepan, sauté the first three ingredients until soft but not brown. Add remaining ingredients and mix well.
    Heat to boiling; reduce heat and simmer uncovered for 20 minutes. Serve at room temperature or place in jars, cover, and refrigerate.
    Yield: Four cups.
    Note: This recipe can also be made in a large electric skillet.
