Egg Rolls with Sweet & Sour Sauce

Ingredients

  • 4 cups raw cabbage, shredded
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1 1/2 teaspoons salt
  • 1 cup chicken, pork, beef, or shrimp, cooked and diced
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon MSG
  • 1 teaspoon sugar
  • 1 package of 20 large, square egg roll wrappers
  • Vegetable oil for frying
  • Sweet & Sour Sauce:
  • 1 1/4 cups white sugar
  • 1 1/2 tablespoons brown sugar
  • 2 1/2 tablespoons cornstarch
  • 1/2 cup vinegar
  • 1/2 cup pineapple juice
  • 2 tablespoons water
  • 1/4 teaspoon red food coloring
  • Instructions


    Combine prepared vegetables and salt in a deep bowl and let stand for 15 minutes. Drain off liquid. Add meat, soy sauce, 1 tablespoon vegetable oil, pepper, MSG, and sugar. Mix well. Place about 2 tablespoons of filling in center of each wrapper. Follow directions on egg roll package as to how the squares need to be folded and sealed.

    Deep fry in 1 1/2 to 2 inches of oil heated to 350° until golden brown, turning occasionally, for about 4 to 5 minutes. Drain on paper towels. Serve warm with sweet and sour sauce.

    Sweet and Sour Sauce

    Mix sugars and cornstarch in small saucepan. Combine all liquids and stir into dry ingredients. Cook and stir on medium heat until mixture boils and thickens. Serve with egg rolls.

    Note: Egg roll wrappers are found in the produce sections of supermarkets.
