Southern Sweet Potato Bread

Ingredients

  • 1/4 cup butter
  • 1/2 cup brown sugar, firmly packed
  • 2 eggs, beaten
  • 1 cup sweet potatoes, mashed or canned
  • 3 tablespoons milk
  • 1 teaspoon orange rind, grated
  • 2 cups self-rising flour, sifted
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/2 cup nuts (optional)
  • Orange Cream Spread:
  • 1 (3-ounce) package cream cheese
  • 1 tablespoon orange juice
  • 1 teaspoon orange rind, grated
  • Instructions


    Cream butter; add brown sugar and beat until light and fluffy. Add eggs, sweet potatoes, milk, and orange rind. Beat with mixer until completely combined. Add flour, nutmeg, and allspice to sweet potato mixture; add nuts if desired. Mix until smooth.
    Turn batter into a greased 9-x-5-x-3-inch loaf pan. Bake at 350° for 45 to 50 minutes or until done. Cool in pan for 10 minutes before removing to a cake rack. Cool before slicing.
    Blend together cream cheese, orange juice, and orange rind and spread on bread before serving.
