Sweet Potato Biscuits

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold shortening
  • 1 cup milk
  • 1 1/2 cups sweet potatoes, cooked and mashed

Instructions


Combine flour, baking powder, and salt in a mixing bowl. Cut in shortening until mixture resembles coarse meal. Combine milk and sweet potatoes, mixing well. Add to flour mixture and stir quickly.
Turn dough out on a lightly floured surface and knead lightly. Roll to 1/2-inch thickness and cut with a floured biscuit cutter. Place on greased baking sheet and bake at 425° for 12-15 minutes.
For sweeter biscuits, add a little sugar and a few drops of vanilla extract to the dough.
Yield: Approximately two dozen.
