Grilled Herb Pork Chops

Ingredients

  • 2 garlic cloves, minced, or 1 teaspoon prepared minced garlic
  • 1/2 cup lemon juice
  • 1/2 teaspoon lemon zest
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped, or 1 teaspoon dried rosemary
  • 1/8 teaspoon dried basil
  • 1/8 teaspoon lemon pepper
  • 4 (1-inch thick) center-cut pork chops

Instructions


Whisk together garlic, lemon juice, zest, oil, rosemary, basil, and lemon pepper.
Place pork chops in a large plastic storage or freezer bag; pour in marinade. Seal and refrigerate for at least two hours or overnight, turning occasionally.
Drain chops and reserve marinade. Grill chops over medium coals for about six minutes on each side or until juices run clear, brushing occasionally with marinade.

Note: Don’t hesitate to use this marinade on pork roast or ribs; it’s so versatile, it can also be basted on poultry or lamb.
