E.A.’s Summer Pickins’

Ingredients

  • 1 head cabbage, chopped
  • 2 to 3 small yellow squash, cubed
  • 2 to 3 small zucchini squash, cubed
  • 1 green pepper, sliced
  • 1 to 2 onions, quartered
  • 2 to 3 potatoes, cubed
  • 1 package fresh mushrooms, sliced
  • 1 bunch broccoli, cut off stem
  • 1 head cauliflower, cut off stem
  • 1 to 2 green tomatoes, quartered
  • Salt and pepper to taste.
  • 1 pound bacon
  • 1 stick butter or margarine
  • 4 to 6 slices American cheese
  • Instructions


    Layer vegetables in a large aluminum pan. Salt and pepper vegetables to taste.
    Fry bacon until crisp; reserve grease. Crumble bacon over vegetables; pour bacon
    grease over vegetables. Place butter on top.
    Cover pan tightly with aluminum foil. Cook on grill over medium heat for 30 minutes or until vegetables are tender, stirring occasionally.
    Uncover and top with cheese slices. Cook until cheese melts, stirring occasionally. Remove from grill and serve.
