Banana Carrot Cake

Ingredients

  • 1/2 cup butter
  • 3/4 cup light brown sugar, firmly packed
  • 2 eggs
  • 2 cups all-purpose flour, unsifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup ripe bananas, mashed
  • 1 cup carrot, grated
  • 1/2 cup dark raisins
  • Powdered sugar (optional)
  • Instructions


    Grease a 9-inch square baking pan; set aside. In a large bowl, cream butter with sugar until light and fluffy. Beat in eggs.

    In a small bowl, mix flour, baking soda, baking powder, cinnamon, and salt. Blend in flour mixture alternately with mashed bananas, beginning and ending with dry ingredients. Fold in carrots and raisins.

    Turn into prepared baking pan. Bake at 350°F for 45 minutes or until cake tester inserted in center comes out clean. Cool for 10 minutes. Turn out of pan and cool completely. Sprinkle with powdered sugar if desired. Cut into squares.
