Oatmeal- Cranberry Cookies

Ingredients

  • 1 cup butter, softened
  • 1 cup firmly packed light brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tbsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 2 cups dried cranberries or craisins
  • 1½ cups toasted pecan pieces
  • 1½ cups uncooked quick cooking oats
  • White chocolate:
  • 3 white chocolate baking bars, coarsely chopped
  • 3 tbsps. shortening
  • Instructions


    Beat butter until creamy, mixing in the sugars as you go. Add eggs and vanilla and beat
    until well blended. Combine the flour, baking soda, baking powder, and salt. Gradually add to butter mixture and blend. Stir in cranberries, pecans, and oats. Drop dough by heaping tablespoonfuls on a lightly greased baking dish. Bake at 375° for 9 to 11 minutes
    until lightly brown. Let cool for 2 minutes on baking sheet. Place on wire rack until
    completely cool. Microwave white chocolate and shortening until melted. Dip half the
    cookie in melted white chocolate, letting the excess drop back into the bowl. Place on wire rack until firm.
