Cinnamon Rolls

Ingredients

  • Batter:
  • 1 tbsp. sugar
  • 1 tbsp. instant yeast
  • ¼ cup warm water
  • 1 cup room temperature milk
  • 1/3 cup vanilla instant pudding mix
  • 1 egg, beaten
  • 1 tsp. salt
  • ½ cup butter, divided
  • 3 to 3½ cups all-purpose flour
  • Icing:
  • 1 ½ cups powdered sugar
  • ½ cup butter, softened
  • 2 tsps. vanilla
  • 2 tsps. water
  • Instructions


    Soak yeast and sugar in warm water. Beat pudding mix in milk and let set 1 minute. Combine pudding, yeast mixture, ¼ cup melted butter, egg, salt, and 2 cups flour. Mix until smooth. Stir in rest of flour and cover. Let rise in warm place for 1 hour. Roll out and spread with remaining ¼ cup softened butter, 1/3 cup packed brown sugar, and 1½ tsp cinnamon. Roll up and cut with thread approximately 1 inch thick or less. Place on 12-x-17-inch greased pan and flatten with your hand. Bake at 350º for 15 to 20 minutes. Let cool before spreading the icing.
    Note: If the dough ends up too sticky to roll up, put on floured surface and fold over several times, just before
    rolling out.
