Microwave Rueben Sandwiches

  • 8 slices dark rye or pumpernickel bread
  • Butter or margarine
  • 1/2 pound corn beef, thinly sliced
  • 1 (8-ounce) can sauerkraut, drained
  • Thousand Island dressing
  • 4 slices Swiss cheese


Toast bread; butter lightly. Arrange sliced corn beef on four slices of toast. Divide sauerkraut among sandwiches. Pour Thousand Island dressing over sauerkraut. Top each with a slice of cheese and cover with a slice of toast, buttered side down. Place each sandwich on a paper plate. Cook one at a time for about 1 minute, or just until cheese is melted.
Yield: Four sandwiches.
