Sweet and Sour Pork

Ingredients

  • 1 tablespoon oil
  • ¾ pound trimmed boneless, pork loin cut into cubes
  • 1 cup green and red pepper strips
  • ¼ cup reduced sodium soy sauce
  • 3 tablespoons brown sugar
  • 3 tablespoons vinegar
  • 1 tablespoon cornstarch
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger
  • 1 (8-ounce) can pineapple chunks in juice
  • 1½ cups rice
  • Instructions


    Heat oil in large skillet on medium-high heat. Add pork to skillet, and stir fry until well browned. Add peppers, stir fry 1 to 2 minutes.
    Mix soy sauce, brown sugar, vinegar, cornstarch, garlic powder, ginger, and pineapple chunks in juice; add to skillet. Bring to a boil.
    Meanwhile, prepare rice as directed on package. Serve pork mixture over rice.
