Tennessee Caviar

Ingredients

  • 2 cans black eyed peas or 1 can black eyed peas and 1 can black beans
  • 1 can yellow or white
  • hominy or 1 can whole kernel corn
  • Salt and pepper, to taste
  • 1 bunch green onions with green stems, chopped
  • 2 large tomatoes, chopped with seeds
  • ½ bell pepper, chopped
  • Cilantro, chopped (optional)
  • 1 small bottle Italian dressing
  • Instructions


    Drain canned vegetables and drain well. Season with salt and pepper. Add green onions, tomatoes, bell pepper, and cilantro.
    Mix lightly, then add dressing. It is best to refrigerate
    overnight. Serve with dipper chips or scoops.
