Cream Cheese Cupcakes

Ingredients

  • 1 package chewy brownie mix, make as directed
  • 1 egg
  • 1 cup sugar
  • 1 (8 ounce) package cream cheese, softened
  • Chocolate chips, optional

Instructions


Put liners in cupcake pan. Prepare brownie mix. Fill cupcake tins ½ full. Mix sugar, cream cheese, and egg. Beat with mixer until smooth. Add chocolate chips as desired. Put a heaping spoonful of cheese mixture on top of each cupcake. Bake at 350º for 25 minutes. For lighter cupcakes, use a box of chocolate cake mix (made according to directions on box) instead of brownie mix. The cake mix version will make twice as many cupcakes, so use less cheese mixture on each cupcake. Cool and store in an airtight container.
