Easy Pumpkin Cobbler

Ingredients

  • 11/4 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 cup canned pumpkin
  • 1/4 cup oil
  • 1 teaspoon vanilla
  • Topping:
  • 1 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/3 cup chopped pecans or walnuts
  • 11/2 cups hot water
  • Instructions


    Preheat oven to 350º. Whisk together the flour, baking powder, salt, sugar, and spices. Add pumpkin, oil and vanilla. Stir just until blended. Spread into well greased, round casserole dish or 9-inch square pan, set aside.
    Mix together the brown sugar, cinnamon, and pecans or walnuts in a small bowl. Sprinkle evenly over the batter. Pour hot water over the top.
    Bake at 350º for about 50-60 minutes. The cake will rise to the top and should be cooked through. There will be sauce at the bottom. Serve warm with vanilla ice cream.
