Pimento Pepper

Ingredients

  • 6 pints ground red pepper
  • 21/2 cups sugar
  • 21/2 cups white vinegar
  • 2 tablespoons salt

Instructions


Grind pepper and add remaining ingredients. Cook over medium heat for approximately 2 hours. When done, it will change color and become thicker. Put in clean, hot 1/2-pint jars and seal.
When making pimento cheese, simply grate your favorite cheese and add the canned
pepper and your desired amount of salad dressing or mayonnaise. (I grate one 2-pound block of Velveeta cheese and one 8-ounce block of Cheddar cheese.) Add two 1/2-pint jars of canned pimento and 1/4 to 1/2 cup of salad dressing. Mix well and serve.
It is good on fresh bread, toast, or even a toasted pimento cheese sandwich made in a skillet. My family also likes celery stuffed with pimento cheese.
