Banana-Nut Bread

  • 3/4 cup butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 2 cups sugar
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 11/2 cups mashed bananas (about 4 medium, ripe, almost black or very speckled)
  • 1 cup chopped pecans
  • 1/2 teaspoon vanilla extract
  • Instructions

    Beat butter and cream cheese with mixer until creamy. Gradually add sugar, beating until fluffy. Add eggs; beat until blended.
    Combine flour and next three ingredients. Gradually add to butter mixture, beating at low-speed until well blended.
    Stir in bananas, pecans, and vanilla.
    Spoon batter into two greased and floured 8x4-inch loaf pans.
    Bake at 350ยบ for 1 hour or until done. Cool bread in pan on wire rack 10 minutes before
    removing from pans.
