Scalloped Oysters (Oyster Dressing)

Submitted By: Reenae Miller

Ingredients

  • 31/2 cups cracker crumbs
  • 1 cup butter or margarine, melted
  • 11/2 pints (24 ounces) oysters, drained and 1/3 cup juice reserved
  • 11/4 cup of heavy whipping cream or half-and-half
  • 1/2 teaspoon salt
  • 1/2 teaspoon Worcestershire sauce

Instructions

Combine cracker crumbs and butter. In a 2-quart baking dish, alternate layers of crumbs and oysters, ending with crumbs. Combine cream or half-and-half with salt, Worcestershire sauce, and reserved oyster juice; pour over cracker crumbs and oyster layers. Bake at 350º for 40 minutes.
Note: For a little more flavor, sauté chopped onions and celery in butter and add to crumbs. This recipe was from my husband’s family. The first time I made it as a newlywed, the response was not favorable. I have improved on my cooking skills (and now have the correct recipe), and this is our favorite dish at Thanksgiving and Christmas.
