Dixie Eggs

  • 1 pound bacon
  • 12 hard-boiled eggs
  • 1/4 pound cheese, grated
  • 1/2 cup flour
  • Milk
  • Salt and pepper to taste


Cook bacon until crisp, reserving drippings. Slice eggs lengthwise and place in an oblong baking dish. Crumble bacon over eggs and add grated cheese.
Make gravy with flour, reserved bacon drippings, and enough milk to thicken it; add salt and pepper to taste. Pour over eggs, bacon, and cheese mixture in dish. Bake at 400ยบ until bubbly. Serve over hot, homemade biscuits.
Note: Several years ago, we began a brunch meal on Thanksgiving for our family so they could spend the holiday with their other families. Everyone seems to like the plan. Since I take this each time, I get a lot of kidding, but there is not much of it left.
