Banana Roll

Ingredients

  • 3 eggs
  • 3/4 cup sugar
  • 1 large banana, mashed
  • 1/2 teaspoon salt
  • 3/4 cup plain flour
  • 1 teaspoon baking soda
  • 8 ounces cream cheese, softened
  • 2 cups confectioner’s sugar
  • 1 tablespoon vanilla or banana flavoring
  • 1/2 stick butter or margarine, softened
  • Instructions


    Combine eggs, sugar, and banana and mix well. Mix in salt, flour, and baking soda. Mixture will be thin.

    Spread mixture on an 18x12-inch baking sheet that has been sprayed with nonstick cooking spray. Bake at 350° for 15 minutes or until brown.

    To make filling, blend together cream cheese, confectioner’s sugar, vanilla or banana flavoring, and butter. When crust is done, turn it onto a sheet of aluminum foil. Spread filling onto it while still warm, covering the entire surface. Roll it up like a jellyroll.

    Leave roll on aluminum foil, wrap, and place in freezer for several hours. Remove and slice before serving.
