Mammy’s Apple Pie

Ingredients

  • 1 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons all-purpose flour
  • 6 cups peeled, chopped apples (about 6 medium apples)
  • 1 (9-inch) deep-dish pie crust, unbaked
  • 2 tablespoons butter
  • 1 cup heavy whipping cream
  • 4 egg yolks

Instructions


Preheat oven to 375º. In a large bowl, mix sugar, cinnamon, and flour together until well blended. Add apples; toss to coat. Spoon into unbaked pie crust, mounding to center. Dot with butter.
Bake for 30 minutes or until crust begins to brown and apples are tender. Remove from oven. Reduce heat to 325º.
In small bowl, beat whipping cream and egg yolks. Pour over apple filling, pressing lightly with fork so mixture seeps into filling.
Return to oven and bake for an additional 30 minutes, or until crust is golden and filling is hot and bubbly.
Note: Serve hot with a scoop of vanilla ice cream or cool to room temperature to make slicing easier. Refrigerate leftovers.
