Three-Cheese Mashed Potatoes

Ingredients

  • 4 large potatoes, peeled and cubed
  • 1 cup sour cream
  • 4 ounces cream cheese, softened
  • 1/2 stick butter, softened
  • 2/3 cup milk
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup shredded Muenster cheese
  • 11/2 teaspoons salt
  • 1/2 teaspoon pepper
  • Instructions


    Cook potatoes in boiling water until tender; drain. Beat potatoes and next three ingredients at medium speed with mixer until smooth. Stir in milk and remaining ingredients. Spoon into 8-x-8-inch baking dish lightly coated with cooking spray. Bake uncovered at 400ยบ for 15 to 20 minutes or until thoroughly heated.
    Note: May be prepared ahead of time and refrigerated. If so, let it sit at room temperature for 30 minutes before baking.
