Easy Pimiento Cheese

  • 1 (8-ounce) package shredded sharp Cheddar cheese
  • 1 (8-ounce) package shredded extra-sharp Cheddar cheese
  • 1 (4-ounce) jar pimientos with juice
  • 1/4 cup mayonnaise
  • Salt and pepper, to taste


Mix cheese together. Add pimientos with juice. Stir in mayonnaise until well blended. Add salt and pepper to taste and stir. Keep covered in refrigerator until ready to serve. Great on bread, celery sticks, or crackers.
Tip: The cheese spreads easier if it sits out 30 minutes or so before serving.
