Pumpkin Cookies

  • 1 cup butter-flavor shortening, softened
  • 1 cup sugar
  • 11/4 cups pumpkin
  • 1 egg
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup raisins
  • 1 cup butterscotch morsels
  • 1 cup nuts
  • Icing:
  • 3 tablespoons butter
  • 4 teaspoons milk
  • 1/2 cup brown sugar
  • 1 cup powdered sugar
  • Instructions

    Cream shortening, sugar, and pumpkin. Add egg; set aside. Mix cinnamon, baking
    soda, salt, and flour; add to creamed mixture. Stir in raisins, butterscotch morsels, and nuts. Drop by teaspoonfuls onto cookie sheet lined with parchment paper. Bake at 350ยบ for 10 to 12 minutes. Cool.
    Mix butter, milk, and brown sugar in saucepan. Boil until sugar is dissolved. Remove from heat and stir in powdered sugar. Spread icing on cooled cookies. If icing gets too stiff, add a little more milk. Double the recipe if you prefer extra icing on cookies.
