Chunky Apple Pumpkin Bread

Ingredients

  • 11/2 cups sugar
  • 1 cup canned pumpkin
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 2 eggs
  • 12/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon ground cloves
  • 1 cup peeled and chopped tart apples
  • 3/4 cup chopped walnuts
  • Instructions


    In a large mixing bowl, combine sugar, pumpkin, water, oil, and eggs; mix well. Combine the flour, baking soda, salt, cinnamon, nutmeg, baking powder, and cloves; add to the pumpkin mixture. Beat on low speed just until moistened. Fold in apples and walnuts.
    Pour into a greased 9-x-5-x-3-inch loaf pan. Bake at 325ยบ for 11/2 to 13/4 hours or
    until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
