Pepper Relish

  • 12 red peppers
  • 12 green peppers
  • 15 medium onions
  • 21/2 pounds sugar
  • 1 pint vinegar
  • 2 teaspoons salt


Grind peppers and onions together. Cover with water and let stand 20 minutes. Drain and squeeze out juice. Put in pan and add sugar, vinegar, and salt; bring to a boil and simmer 30 minutes. Pour in jars and seal.
Serve on hot dogs, hamburgers, and sandwiches.
