Peanut Butter Pudding

Ingredients

  • Crust:
  • 1 cup flour
  • ½ cup chopped nuts
  • ½ cup melted butter
  • Filling:
  • 3 cups milk, divided
  • ¾ cup sugar
  • 4 tablespoons cornstarch
  • ½ teaspoon salt
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 3 egg yolks
  • Crumbs:
  • 1 cup powdered sugar
  • ½ cup creamy peanut butter
  • 1 (8-ounce) container whipped cream
  • Instructions


    In a bowl, combine flour, nuts, and butter. Press into bottom of 9-x-13-inch pan and
    bake at 350º for 15 minutes.
    Heat 2 cups of milk; add dry ingredients to 1 cup milk and beat. Add to heated milk and cook for two minutes. Remove from heat, add butter and vanilla, and stir in egg yolks. Let the pudding cool.
    In a bowl, combine powdered sugar and peanut butter. Mix together with a knife and fork. Put most of the crumbs on the crust, saving a few for topping.
    Place cooled pudding on crumbs; layer with whipped cream and sprinkle remaining crumbs as topping.
