Old-Fashioned Cracker Pudding

Ingredients

  • ¾ cup sugar
  • Pinch of salt
  • 3 eggs, separated
  • 2 cups milk
  • 1 cup crushed crackers
  • ½ cup flaked coconut
  • 1¼ teaspoons vanilla, divided
  • Pinch of salt
  • ¼ cup sugar
  • Instructions


    Combine first four ingredients in a medium saucepan; mix well. Add crackers and coconut. Cook over medium heat, stirring constantly, until mixture thickens. Stir in 1 teaspoon vanilla. Spoon into a 10-x-6-x-2-inch baking dish.
    Beat egg whites, at room temperature, and a pinch of salt until foamy. Add sugar, 1 tablespoon at a time. Beat until stiff peaks form. Add ¼ teaspoon vanilla and beat until blended. Spread meringue over pudding. Garnish with additional coconut. Bake at 350º for 12 minutes or until golden brown.
