Squash Quiche

Ingredients

  • 1 cup self-rising flour
  • 1 cup diced green onion
  • 1/4 teaspoon thyme
  • 1/4 teaspoon basil
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon cilantro
  • 1 teaspoon garlic powder
  • Dash of ginger
  • 1/2 cup cooked and diced bacon
  • 4 large eggs
  • 2/3 cup oil
  • 1 small jar pimientos
  • 1/2 cup Cheddar Jack cheese
  • 2 tablespoons cream cheese
  • 3 cups thinly sliced yellow squash
  • Instructions


    1 can French’s fried onions
    Heat oven to 350º. Grease and flour a 9-x-13-inch baking pan.
    In a mixing bowl, combine flour, onion, herbs, and bacon. In a small bowl, whisk the eggs with oil and pimientos; mix with dry mixture and stir until blended. Fold in the cheeses and squash. Spread in a baking pan and cover with crushed fried onions.
    Bake 25 minutes or until set and lightly browned around the edges. Cool slightly and cut into squares. Serve with tomato salsa on the side, if desired.
