Hawaiian Delight Ice Cream

  • 5 cups milk
  • 6 eggs
  • 6 tablespoons cornstarch
  • 21/2 cups sugar
  • 1/8 teaspoon salt
  • 2 packages unflavored gelatin
  • 1 cup orange juice
  • 2 cans sweetened condensed milk
  • 1 teaspoon vanilla
  • 1 cup crushed pineapple
  • 1 cup mashed ripe bananas
  • 1/2 cup maraschino cherries, chopped
  • 1/2 cup pecans, chopped
  • 2 cups whipping cream
  • 2 cups light cream
  • Instructions

    In a heavy saucepan, heat milk until scalds. In a separate bowl, mix together eggs, cornstarch, sugar, and salt. Carefully add egg mixture to the milk, stirring until it forms a soft custard. Turn off heat.
    Soften gelatin in orange juice. Stir gelatin mix, vanilla, and sweetened condensed milk into custard. Let custard mixture cool. Add vanilla, fruit, nuts, whipping cream, and light cream. Chill in refrigerator for one hour.
    Stir and pour into a 6-quart hand-crank or electric ice cream freezer. Freeze, according to manufacturer’s directions, until ice cream is firm.
