Almond-Coconut Candy Bar Bites

Ingredients

  • 2 (16-ounce) packages chocolate-flavored candy coating, divided
  • 2 (7-ounce) bags sweetened flaked coconut
  • 3/4 cup light corn syrup
  • 11/2 teaspoons coconut extract
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 3 cups toasted whole almonds

Instructions


Line a 13-x-9-inch baking pan with aluminum foil, letting foil hang over sides. Set
aside. In a large microwavable bowl, microwave 1 package candy coating on high in 30-second intervals, stirring between each, until melted, about 11/2 minutes. Pour into prepared pan, spreading evenly. Let set at room temperature until candy coating is hard, about 25 to 30 minutes.
In the work bowl of a food processor, combine coconut, corn syrup, extracts, and salt. Pulse until coconut “comes together.” Press coconut mixture evenly onto chocolate layer. Melt remaining package candy coating in microwave as before. Pour over coconut mixture, spreading evenly. Place almonds approximately 1 inch apart on chocolate. Let set completely. Cut into 41/2-x-11/2-inch bars. Store covered at room temperature for up to one week.
