Tenderloin Wrap

  • 1 (8-pound) roll pork tenderloin
  • 10 whole garlic cloves
  • 1 medium onion (cut in 1/2-inch pieces)
  • 1 medium green bell pepper
  • 1 pound bacon
  • Salt and pepper, to taste


Cut slices in tenderloin about 1 inch apart without cutting all the way through meat. Place garlic cloves, onion, and pepper between each slice. Wrap in bacon and season with salt and pepper. Wrap in tin foil, place in a pan, and bake at 300º for one hour. Turn oven to broil, reduce heat to 200º, and bake 30 minutes more.
