Gingered Peas and Carrots

Ingredients

  • 1-2 teaspoons butter
  • 3 cups julienne-cut carrots, (sliced in 1/4 inch strips)
  • 1/4 cup diced onion, optional
  • 3 tablespoons brown sugar
  • 1/2 cup frozen peas, thawed
  • 1/2 teaspoon grated fresh ginger or 1 teaspoon finely chopped crystalized ginger
  • Salt and pepper to taste

Instructions


Melt butter in a large saucepan on medium low heat. Add carrots, onion (if desired),
and sugar. Cook 15 minutes or until carrots are tender, stirring occasionally. Add peas, ginger, salt, and pepper. Cook one to two minutes longer until heated through.
