Oatmeal Molasses Cookies

Ingredients

  • 1/2 cup seedless raisins
  • 1/3 cup water
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2/3 cup butter, melted
  • 1 cup sugar
  • 1 egg
  • 1 tablespoon molasses
  • 2 tablespoons raisin water
  • 2 cups regular oats
  • 1/2 cup walnuts, chopped
  • Instructions


    Preheat oven to 400° 10 minutes before baking. Wash raisins; add water and simmer three minutes. Drain, reserving water. Sift flour; measure and resift four times with the next four ingredients. With a wooden spoon, beat butter and sugar thoroughly; beat in egg and then molasses. Add flour mixture and raisin water alternately in two or three portions, mixing until smooth each time. Stir in oats, raisins, and nuts. Place heaping teaspoonfuls of dough 2 inches apart on lightly greased baking sheets. Flatten with tines of a fork, keeping the shape as round as possible. Bake 10 to 11 minutes or until light brown. Let cookies stand for one minute until removing to a cake rack to cool.
