Garden Tuna Sandwiches

Ingredients

  • 1 (6-ounce) can water-packed tuna, drained and flaked
  • 2/3 cup peeled, seeded, and chopped cucumbers
  • 1/2 cup shredded carrots
  • 1/4 cup finely chopped green onion
  • 1/4 cup Dijon mustard
  • 1/4 cup fat-free mayonnaise
  • 2 tablespoons fat-free sour cream
  • 1 tablespoon lemon juice
  • Pepper to taste
  • 4 lettuce leaves
  • 8 slices bread
  • Instructions


    In a bowl, combine the first nine ingredients. Spread on four slices of bread; top with lettuce and another slice of bread.
