Frog Eye Salad

  • 1 (20-ounce) can crushed pineapple
  • 1 tablespoon flour
  • 1 beaten egg
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 cup acini de pepe pasta
  • 1 (15-ounce) can mandarin oranges, drained
  • 3-4 cups mini marshmallows
  • 1 tub whipped topping
  • Instructions

    Drain pineapple, reserving 2/3 cup juice. Cook juice with flour, egg, sugar, and salt; stir until thick. Add lemon juice. Set aside to cool.
    Bring 3 cups water to a boil in medium pan. Add pasta and cook for three minutes; remove from heat and let stand for three minutes. Drain pasta and place in a large bowl; add pineapple juice mixture. Add pineapple, mandarin oranges, and marshmallows. Fold in whipped topping. Chill one to two hours before serving.
