Barbecue Cajun Cabbage

Ingredients

  • 1 large cabbage head
  • 1 large onion
  • Butter
  • 6 garlic cloves
  • 1 each medium green,
  • yellow, red bell pepper
  • Salt and pepper to taste
  • Cajun seasoning to taste
  • Barbecue sauce
  • Instructions


    Peel off large leaves of cabbage; set aside. Cut cabbage lengthwise and diagonally (do not cut all the way through). Rinse cabbage and drain. Slice onion into 1/2-inch slices. Slice bell peppers lengthwise. Place pats of butter, garlic cloves, onion slices, and bell pepper slices between leaves and in middle of cabbage. Sprinkle with seasonings.
    Place cabbage on heavy-duty aluminum foil. Pour barbecue sauce over all. Wrap well in foil. Place on a hot grill; cook for about one hour, turning cabbage head a couple of times during grilling. To test for doneness, open a small hole in foil. If fork goes in easily, it is done. If not, cook a few minutes more.
