Lemon Blossoms

Ingredients

  • 1 (181/2-ounce) yellow cake mix
  • 1 (31/2-ounce) package instant lemon pudding mix, dry
  • 4 eggs
  • 3/4 cup vegetable oil
  • Glaze:
  • 4 cups powdered sugar
  • 1/3 cup lemon juice
  • Grated zest of one lemon
  • 3 tablespoons vegetable oil
  • 3 tablespoons water
  • Instructions


    Preheat oven to 350ยบ. Coat miniature muffin pans with cooking spray.
    In a large bowl, combine cake mix, pudding mix, eggs, and vegetable oil. Blend with electric mixer for two minutes. Spoon 1 tablespoon mixture into each muffin cup. Bake 12 minutes. Turn onto a tea towel.
    To prepare glaze, sift powdered sugar into a medium bowl. Add lemon juice, zest, oil, and water. Mix until smooth. Dip muffins into glaze while they are still warm, covering as much of cake as possible. Place cakes on wire racks with wax paper underneath to catch drips. Let glaze set thoroughly before storing in air-tight container.
